Mint Brownies
First, make a 9x13 pan of regular old brownies. The ordinary kind will do. I often just use a boxed mix from the store. Once they're finished, wait for them to cool.
Next, you'll need:
1/2 cup butter or margarine
2 1/2 cups powdered sugar
3 tbsp creme de menthe liqueur (though I sometimes add a little more in place of the butter ;)
green food coloring if you want it to look extra-minty
Mix those together until you get a nice frosting. Spread it evenly over the cooled brownies. Keep it in the fridge for a little while until the frosting is set.
Then melt 1 cup of chocolate chips and 6 tbsp of butter. While it's still melted, spread it over the frosting in another even layer. Stick the brownies back in the fridge until the chocolate topping is totally set. And voila! Mint brownies with a touch of liquor! (Though despite the booze, they really don't have a significant alcohol content -- maybe 1/2 tsp per brownie.)
