So, I made this tonight, and we thought it was really yummy, despite the fact that it was in the oven before I realized I had left out the oil. Without the oil, it's really not terribly bad for you. So, I thought I would share the recipe. I found it a little salty, but the fiancee did not, so you may want to adjust the salt according to your taste.
Ingredient List:
1 1/2 cups all purpose flour
1/3 cup sugar
2 tsp baking powder
1 tsp baking soda
1 1/2 tsp ground cinnamon
1/2 tsp salt
1 cup plain non-fat yogurt
3/4 cup mashed ripe banana
1 large egg
1 tsp vanilla extract
Powdered sugar
Preheat oven to 400F. Spray 8" square baking pan with non-stick spray. Combine flour, sugar, baking powder, baking soda, cinnamon and salt in a large bowl. In a separate bowl, whisk together yogurt, mashed banana, egg and vanilla. Pour over dry ingredients and stir gently just until blended. Do not over mix.
Spread batter in prepared pan, bake cake until top is light brown and edges begin to pull away from sides of pan, about 20 minutes. Cool on rack, sprinkle lightly with powdered sugar.
It's very, very simple, and it only has however much fat is in an egg. Consume and enjoy.
