Or Donkey saucisson! Or, or, or -- Duck breasts? It's a French classic, but it doesn't seem that common on this side of the ocean.

No saucission d'ane! So sad! I hear it has a sweet, slightly nutty flavour. Duck breasts were available, but we can get those in the market if we like.

I've never tried saucisson d'âne either -- it's not that easy to find, actually, unless you live in Corsica.

Wild Boar is really yummy. I'd also go for the Grouse. Venison is good in stews and things, but gets really dry. I've never had Llama or Antelope, but those could be yummy.

Depends - it it's hung, venison or grouse. If not, poussin maybe, although chicken, boring. Rattlesnake, because it's weird!

I always like venison. And if the antelope is prepared correctly it can be quite good. I have had ostrich steak once, it was very very good. It had a mild beef sort of flavour. I am not sure how good it would be ground as patties, but it's worth a try.

Don't get Buffalo, it's basically just lean cow, and rattlesnake doesn't have much flavour. My vote is wild boar or grouse.
