....What's meant by dolcelatte cheese? Can you describe its purpose/taste/texture? It's an ingredient in a savoury tart I want to try making. I have a feeling it may just be quark, but hey, I thought I'd ask!

That's about right. It's very very creamy, and only mildly blue.
