la_rainette makes perfect cannele. Her cannele even have the accents on the word. I did, however, learn today that it's traditional to coat the molds in beeswax, and that scares me a lot. I think I'd be happy learning from
la_rainette that she did NOT use beeswax... I'd post a recipe but all I have is the Paula Wolfert one which is a sucky pile of mistranslated, poorly scaled problems.

It still tastes heavenly, and since its aim is to end in my stomach and not on my wall, I ask people to mind their own beeswax and to let me ignore mine *grins*
