1. [livejournal.com profile] la_rainette makes perfect cannele. Her cannele even have the accents on the word. I did, however, learn today that it's traditional to coat the molds in beeswax, and that scares me a lot. I think I'd be happy learning from [livejournal.com profile] la_rainette that she did NOT use beeswax... I'd post a recipe but all I have is the Paula Wolfert one which is a sucky pile of mistranslated, poorly scaled problems.

2. Ahahahahaha who wants to get me this for my birthday? You can all go halfsies. I don't care.

I don't use the beeswax: it's just to make the cannelés SHINE more, and frankly, I am good at making TASTY food, but it never looks quite like it should.

It still tastes heavenly, and since its aim is to end in my stomach and not on my wall, I ask people to mind their own beeswax and to let me ignore mine *grins*

D'you have scales? I have an excellent recipe (from my Pierre Hermé book).

You don't have it in your basement? :-) I was more showing off that the French version is available on American Amazon for my greedy consumerism; I thought I was going to have to make do with the English translation, which though carried out by a venerable American baker has serious problems. I am fine sans Calvel. *hugs you for the thoughtfulness*

I would love the cannele recipe, although I am always amazed that something that looks that burnt can taste that good, and yes, I do have scales!

:D 'k. I'll copy it out and email it to you, only I'll do that tomorrow cos I am too tired tonight and the kids are HUNGRY. D'you mind if I leave it in French? I could translate it of course, but I don't think it's necessary, now, is it? *winks and grins*

Speaking of translations! Today there was an email at work from [your domain].ca advertising a redactrice for scientific and medical documents, and I really had to look twice to make sure it wasn't from you.
