MY WIFE MADE TOFU NUGGETS. THEY WERE SO YUMMY. SHE IS A CULINARY GENIUS.

.....And later I will post the cinnamon bun recipe, which I realised is pretty much of my own devising. I don't know how they'd turn out if I'd... followed the recipe.

Well, it turned out on closer reading of the recipe (which I read, at that early hour, and followed as though it was a drop scone recipe) that only a third of the butter was actually to be added into the dough, which would have meant a tragically dry, shaggy dough. (The other two-thirds of it, referred to only opaquely in the recipe text, is to be brushed onto the dough before rolling. Makes no SENSE.)

Filling
3/4 cup brown sugar
1/4 cup white sugar
2 tsp ground cinnamon
1/8 tsp salt
1 tbsp melted butter, reserved

Dough
2 1/2 cup flour, plus more for dusting
2 tbsp sugar
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla extract
1 1/4 cup buttermilk or clabbered milk
6 tbsp butter, melted

Combine all filling ingredients, except melted butter, and set aside.

Preheat oven to 425° F.

Whisk dry ingredients for dough. Add milk, butter, and vanilla, and mix quickly until dough is evenly combineed and looks shaggy.

Turn dough out onto floured surface. Flour your hands and the top of the dough and pat out into a rough 12-inch rectangle.

Brush with reserved melted butter and sprinkle with filling, leaving a half-inch border all around. Press filling down into dough with a fork.

Roll up as tightly as possible from the short side of the rectangle. Pinch edges to seal in filling (some filling will escape).

Cut into 6 or 8 rolls.

Carefully transfer rolls to baking pan (9-inch round is best). Bake 20—25 minutes until set and lightly browned.

[livejournal.com profile] sovay also found yesterday that if there's any melted butter left over, brushing it on top of the rolls doesn't hurt, as it soaks down into the exposed filling and keeps it from becoming gritty as it bakes.
